2nd Course: Seared Creole alligator tenderloin tossed in a sweet & spicy pear glaze served atop dirty rice
3rd Course: Wild boar ragu served with pappardelle pasta & an herbed creme fraiche
4th Course: Pheasant & duck fat confit tri colored fingerling potatoes with a Bing Cherry balsamic glaze
Desert: Foraged berry & goats milk tart with a walnut crust, chocolate bark & hickory smoked whipped cream
