In Part 1 of Balan's Guest Supper Series, Balan's Executive Chef Justin Brown invites Palmar Executive Chef Pedro Lara for a collaborative dinner.
This is a ticketed event on Tuesday October 27th. Each ticket includes a 6 course tasting menu showcasing where East meets West in flavors and cooking techniques created by both chefs.
The menu will be as follows:
Dashi style broth with daikon, langoustine & sweet potato
Smoked mushroom spring rolls with a sweet aromatic soy
Homemade baked guava, pork and onion bao
5 hour slow grilled beef short rib, homemade kimchi BBQ sauce, chili, scallion, fried onion and cilantro served with a gamja salad
Grilled snapper, miso aji amarillo sauce, fried szechuan polenta and edamame
Sticky mango rice, coconut and banana leaf
