Trinh and Thai Nguyen are excited to welcome fellow chef and friend, John Nguyen of Chôm Chôm, Hong Kong’s lively Vietnamese Bar + Kitchen, for a special dinner on Bainbridge Island.
It’s a New York city reunion of sorts, as Thai and John meet when they were both cooking in the city—Thai at Restaurant Daniel and John at Hanoi House, where he was named 2017 ‘Chef of the Year” by Eater—they were also palling around with Luke Wohlers, who now owns Walden Selections in Seattle, and is pairing wines for the special menu.
The menu for the evening is as follows:
Frog Leg Net Crispy Roll
frog leg, seaweed, net wrapper, and kumquat nuoc cham
Uni Banh Khot
rice flour, turmeric, uni, quail egg, herbs, lettuce, and nuoc cham
Banh Uot & Beef Tongue
steamed rice paper, beef tongue, banh cong, bean sprouts, pickled vegetables, basil, mint, fried shallot, and nuoc cham
Vit Tai Xa with Rice Cracker
maple leaf duck breast , lemongrass, curry, galangal, thai chili, lime, and sesame rice crackers
Pan Seared Salmon Congee
salmon, rice congee, rau ram, and la lot
Seafood Medley Mi Quang
mussel, shrimp, scallop, lardons, turmeric rice noodle, bean sprouts, herbs, and saffron
