Porchettiamo is an Italian tradition of eating porchetta at various locations with your friends. We’ve adapted this festive tradition to create a meal featuring 7 different pork preparations.
In Italy, we have explored every possible way of creating dishes with pork. There are thousands of pork recipes in Italy; most of them have never been served in the United States.
We are doing a special meal with 7 different courses of pork (plus dessert). I’m going to serve dishes that have never been served at Bello and many of them have never been served at an American restaurant.
Here Is the planned Menu - I will select the exact preparations when I see what is fresh that day, as we do in Italy.
The 7 courses of pork are as follows:
Pork Terrine Milanese
Crispy Pig Ears, Punterelle, Anchovy, Lemon
Bello Black Truffle Mortadella, Hazelnut, Arugula
House Made Sausage, Rapini, Peppers, Confit Potato
Tagliatelle, Guanciale, Chestnuts
Porchetta, Sandro’s Mom’s Polenta, Prosciutto Jus
Pancetta Gelato, Cherry, Black Pepper, Chocolate
Don’t worry - portions will be appropriately sized so that you can enjoy every course.
Substitutions are politely declined for special events dinners as the kitchen cannot handle custom orders with so many plates.
The cost is $65 per person plus tax and gratuity. A special wine pairing selected to go with each course will be available for an additional $60.
