For the first chapter in the our Staycation Series we are taking inspiration from the Yucatan and bringing you Cochinita Pibil (Yucatán-Style Barbecued Pork).
Chef Daniel takes a suckling pig and rubs it down in a house-made achiote orange glaze, which is then slow roasted 12 hours in banana leaves and citrus juice. Once roasted the whole pig is pulled. The crispy achiote glazed pig skin is used a base for all the pulled meat. This results in a savory pork "cake" that is sliced and pan fried to order. A zippy marinade, banana leaves, and a grill help reproduce the sweet, earthy flavors traditionally gained by cooking in an underground oven. This is a must try classic brought to you from the Yucatan to Boulder.
