Learn the art of crafting fresh handmade pasta. Gemma Foods’ Founder and Chef, Tony Quartaro, will teach you how to make your own fresh pasta dough, create pasta shapes and design seasonal sauces. The 2 hour class will include an introduction to handmade pasta making, including the tools and equipment needed, basic ingredients required and general cooking techniques to feel like a chef in your home kitchen. You will work in teams of 2 people.
The class instruction timeline will include:
- Educational overview of dough making
- Types of flour and tips for flours by pasta type
- Hydration levels
- Adding eggs, fat, etc.
- Adding color / making patterns
- Hands on dough making, shaping and filling
- Cooking of sauces and pasta creations
- Plating and enhancements
- Eating your pasta creations at the completion of the class
What’s included:
- Welcome salumi board
- 1.5-2 hours of instruction
- Plated pasta for consumption and salad served family-style
- Recipe sent via email post-class
NOTE: Individuals will be standing and cooking for up to 2 hours. Please advise that your group wear comfortable clothing and shoes.
BYOB Policy
Classes are BYOB. In accordance with the City of Chicago, customers are allowed to bring their own alcoholic beverages and serve themselves. Minors will not be allowed to consume alcohol on our premises. Individuals who are visibly intoxicated upon arrival or become so while on premises will be asked to not participate in the class for their own safety and at the discretion of our staff.
We allow for one bottle of wine, one six pack of beer or one six pack of seltzer or seltzer-like pre-made beverages per two people in your group. For example, if there are 12 people in your party, you are allowed to bring six bottles of wine to share. No hard alcohol bottles are allowed on premises. We will provide acrylic drinkware for your beverages as glass will not be allowed at the instruction tables. We will also have ice and a cooler available.
