Our approach to winemaking is profoundly affected by medieval tapestries depicting the early winemaking practices of the monks of Burgundy. We work entirely with whole clusters, tread conical wood fermenters by foot, press in old fashioned basket presses and move the wine around in 5 gallon buckets. As harvest winds down and winter sets in we develop a deep craving for the perfumed wines and rustic, country cuisine of this historic land. There is a rich festive culture of parties and gatherings that has accrued around this food and wine over the ages and we’re excited to share our version of this experience with you.
