Boucherie wines with a meticulously crafted multi-course menu led by Mt. Boucherie winemaker Jeff Hundertmark and H Tasting Lounge sommelier Mya Brown.
Begin with house-made French pain de campagne, served with Golden Ears Creamery cultured butter and smoked sea salt and Mt. Bubbles. A delicate pan-seared Hokkaido scallop amuse-bouche with OV Sémillon. Savour the richness of lobster bisque with Northern Divine caviar, charcoal tuile, and tarragon cloud and MtB White Label Rosé. Oven-roasted halibut shines in the second course, complemented by BC clams, sea asparagus, and vermouth cream with Original Vines Chardonnay. The indulgence continues with a duo of duck—five-spiced duck breast and confit duck leg croquette—paired with parsnip purée, braised fennel, and blackberry jus and MtB Reserve Syrah. For a grand finale, a stunning mille-feuille layers crisp puff pastry with blackberry mascarpone, chantilly cream, and edible flowers along with Icewine Merlot.
