December tasting is inspired by the Traditional British Christmas dinner table, resplendent in the family
tablecloth, the table is laden with a centerpiece of a whole roasted turkey surrounded by pigs in blankets (kilted
sausages) bowls of roast potatoes, Brussel sprouts, peas, roasted parsnips and carrots, sage and onion stuffing
with rosemary or thyme perhaps, Yorkshire pudding, Cranberry sauce, and a gravy boat, bottles of red and white wines, dessert is Christmas pudding ablaze with brandy previously poured upon it, maybe figgy Christmas pudding, but definitely icing sugar dusted mince pies
filled with brandy soaked raisins, cranberries, and sultanas, and spices such as cinnamon and nutmeg, mince
pies are served with double cream or custard or Ice cream, sometimes all three, and there is coffee and tea
accompanied by snifters of port and brandy, a veritable cornucopia of flavours, aromas and delicate textures.
The Tasting:
Is a study in wood, to be precise oloroso, ruby port, and sauternes-soaked oak casks, along with good old ex-bourbon casks, four drams to delight your tasted buds and olfactory bulbs alike, what makes this
different from our other tastings? simple really, before you taste each of the wine /fortified wine cask
expressions you will get to sample each of the wines from those particular casks that the spirit matured in, so for
the Lasanata you will receive a sample of oloroso sherry, the Nectar D’or a sample of sweet Sauternes wine,
and for the Quinta Ruban a sample of ruby port, savor the wine and then allow your nose and palate to pick out
the flavours and aromas in the spirit, an excellent way to expand your nose and palate in the company of like-
minded individuals
