we are pleased to offer two very special cooking classes in August with our friend Louisa Shafia, chef and noted cookbook author (The New Persian Kitchen). Louisa is half Iranian and a dynamite teacher and chef. Persian cuisine is one of the greatest cuisines there is based on lots of rice, herbs, yogurt and vegetables. Come join us as we teach you how to add these dynamic flavors to your kitchen. The class will be a hands on experience followed by a meal of everything we make. Learn how to make tahdig, the delectable crunchy rice at the bottom of the pot and one of Iran’s most famous dishes, . Louisa’s bright, colorful take on Persian cuisine is a mix of traditional favorites and fresh takes on ancient flavors. Louisa’s food has been featured in The New York Times, The Wall Street Journal, and NPR, and her long-running Persian food pop-up at Sara’s New York restaurant Porsena garnered rave reviews in The New Yorker and New York Magazine. Along with Louisa’s tricks for making tahdig, you’ll learn how to make a tableful of dishes for a summer feast using ingredients like saffron, turmeric, sumac, mint, and dried limes.
