Nixta Taqueria is hosting Jorge Gaviria of Masienda for September's Xolovino Wine Club to celebrate the launch of his cookbook MASA: Techniques, Recipes, and Reflections on a Timeless Staple.
Masa, the dough that’s formed from stone-ground nixtamalized corn and transformed into tortillas, tamales, and more, is one of the foundations of Mesoamerican civilization and a bedrock of Mexican cooking. The book celebrates this staple ingredient and serves as a guide to making high-quality, craft masa from scratch and cooking with it at home.
For the evening, Nixta's team will whip up a range of masa-centric dishes to pair with a selection of wines for a night of eating, drinking, and celebrating all of masa's glory. Austin's Book People will also join us for the evening for anyone interested in getting their own copy.
