Taught by Julia Poplawsky, Austin Street Group Culinary Director, this hands-on class explores the wonders of whole duck butchery. Julia will impart her knowledge of butchery with everyone as she works with the class to break down an entire raw duck. Julia will then instruct the class on various cooking techniques that will make holiday entraining a breeze. Each person goes home with their own butchered duck. Class is followed by a sampling of various duck dishes and their accompaniments along with complimentary wine pairings provided by La Bergerie.
