About Chef Paul: Raised in Connecticut, Chef Paul fell in love with food at age 22, when he found himself cooking a Thanksgiving meal for eight new Swedish friends in Stockholm. His newfound culinary calling drove him to the award-winning kitchens of wd~50 (1 Michelin star), Aska (2 Michelin stars), and Gwynnett Street, where he met his current business partner Jorge Olarte.
About Chef Jorge: Born and raised in South Florida, Chef Jorge pursued a career in culinary arts on a whim after trying his hand at various other vocations. After graduating from culinary school over 15 years ago, he went on to work in some of NYC’s most respected kitchens including Cafe Boulud (2 Michelin stars), Momofuku Ma Peche, and Momofuku Ssam Bar. He met his current business partner, Paul D’Avino, while working at Gwynnett Street where they bonded over a shared passion for all things pasta.
Jorge and Paul connected over their shared love for Italian flavor. After eating their way through Italy and gathering inspiration, they began making plans to open their own restaurant, Cafe Mars. Their dream has finally become a reality as they prepare to open the doors of Cafe Mars in Brooklyn this Fall.
