CHEF CHAD COLBY
Heralded as a “culinary Quentin Tarantino,” Los Angeles native Chad Colby received his formal training working in some of Los Angeles’s landmark restaurants, including Campanile and Mozza, and through several working trips in Italy. As Executive Chef of chi SPACCA, which he opened with Nancy Silverton, he was nominated as Best Chef West by the James Beard Foundation. Chad now owns and operates the highly acclaimed Italian restaurant, Antico Nuovo, where time-honored cooking techniques are featured with inspiration from Italy’s traditional farmhouse cuisine.
CHEF ARTURO ROJAS
With his roots in Lima, Peru, is a passionate Chef who has adapted to and excelled in diverse kitchen environments. His creativity and adaptability were honed during his time at Astrid & Gastón in Lima, Perú, where he demonstrated innovation in the arrangement and presentation of dishes. He then moved to Rooster & The Till in Tampa, Florida, where he served as Sous Chef, overseeing a high-performing team. In Los Angeles, his ability to work under pressure elevated him to his current position as Chef de Cuisine at Antico Nuovo.

This extraordinary dining and beverage experience brings together top chefs from around the country for a 4-part collaborative rotation, each presenting a unique evening showcasing their style, skills and passions.
