The State Room is excited to welcome you to an exclusive wine dinner with PlumpJack Wines, located in the heart of Napa Valley. Sandra Roberts, Director of Sales, will be taking you on a tasting journey of exceptional wine from PlumpJack, CADE, and Odette Estate Wineries, which will be thoughtfully paired with delicious cuisine from our State Room chefs. “Wine Sales isn’t something done remotely,” Roberts says. “It’s a relationship business and requires a feet on the street approach to share our story, bring a sense of our vineyards and our passion for winemaking to our customers. We take nothing and no one for granted.”

Course One | Adaption Cabernet Sauvignon paired with local beef carpaccio, shaved fennel, lemon-infused olive oil, pecorino, flatbread
Course Two | PlumpJack Chardonnay paired with poached diver scallops, wild mushroom broth, potato + ramp dumpling, fried celeriac
Course Three | Adaption Petite Sirah paired with roasted local lamb, tri lentil ragout, braised endive, blackberry au jus
