The chef’s tasting menu at Sura-Gan is based on the recipes in the history of Joseon Dynasty and Korea in chronological order.
Chef Jongmoon Choi gets inspired from them and creates new dishes using Korean and Modern techniques.
The current season is based on Eumsik Dimibang, which is the first recipe book written by a woman in East Asia and the first cookbook was written in Korean around 1670.
