The Sea, The Sea Guest Series: Brad Carter, Carters of Moseley
The next in our sell-out Guest Chef series at the Chef’s Table is Brad Carter from the Michelin-starred Carters of Moseley (Birmingham).
Brad Carter's culinary journey is far from ordinary. Self-taught and determined, he started as a kitchen porter and fell in love with cooking. After attending University College Birmingham, he honed his skills in Menorca, specializing in whole animal butchery and preservation techniques. Returning to the UK, he worked in local establishments before opening his own restaurant. The accolades followed, including a coveted Michelin Star. Carter's restaurant, Carters of Moseley, celebrates British terroir, embracing seasonality and minimizing waste. He's a passionate advocate for sustainability and supports the rare breed movement. Brad also founded the Birmingham Slow Food movement and is part of the Ark of Taste, preserving global culinary traditions. Collaborations, like his award-winning salts with Droitwich Salt, showcase his dedication to British produce. He's an official brand ambassador for Gozney and Exmoor Caviar and has even introduced the One Star Döner Bar, offering high-end Berlin-style kebabs. Brad is a regular presence on television, with appearances on shows like Saturday Kitchen Live and live demonstrations at national expos.
