Originally founded in Seattle in 2016, Pop-Up Oyster Bar Co. has grown into a traveling raw bar experience serving the Pacific Northwest, Northeast and beyond. Their mission puts quality and sustainability first, working closely with shellfish growers and sourcing exceptional products while sharing their passion for oysters, aquaculture, and the people behind the food.
Their expert shuckers believe great oysters deserve to be served with care, finesse, and a little fun — making this more than your average seafood stop.
🍷The seafood is only half the experience! Our Queensbury Restobar offers the perfect backdrop for a relaxed summer evening, with indoor seating and an outdoor patio overlooking our estate vines.
We'll be creating a special wine pairing menu just for the occasion, matching select Adirondack Winery wines with Pop-Up Oyster Bar Co.'s seafood offerings.
Not a wine drinker? We also serve Extreme Heights hard cider, local craft beer and spirits, signature cocktails, mocktails, and non-alcoholic options.
