“Blanc de blancs” means “white from whites,” bubbles made only from white chardonnay grapes. It’s the elegant, crisp, endlessly versatile side of sparkling, and yes, it shares a name with us for a reason. Tonight we pour it from light and mineral to rich and toasty, and make every glass approachable.
The evening begins with a welcome bite and opening pour before settling in for a three-course dining experience crafted by Chef Tom. Each course is paired with a different blanc de blancs, showing off just how much range a single grape can have.
