Todd Spanier, who has spent more than forty years foraging the forests of the Mt. Shasta region, will guide guests in search of wild Matsutake while sharing his deep knowledge, stories and lifelong passion for mushrooms and other wild edibles.
Our host, Chef Neil Marquis, welcomes us to his beautiful five-acre forest property, where he will prepare mushroom-inspired brunches on Saturday and Sunday mornings.
As evening falls on Saturday, Chef Aya Cataldo-Fujioka, Chef Lonnie Henson and Chef Neil Marquis come together for the centerpiece of the weekend: an intimate five-course Matsutake dinner, celebrating the remarkable perfume, flavor and character of freshly harvested wild Matsutake.
