Chef Grant Rico, a Pacific Northwest native, has spent his career training and cooking in some of the country's most respected kitchens. After graduating from college, he attended The Culinary Institute of America in Hyde Park, New York. His career has taken him from New York and San Francisco to Colorado and California's wine country, holding positions including Sous Chef at Element 47 at The Little Nell in Aspen and Chef de Partie at the three-Michelin-starred SingleThread in Healdsburg.
Grant returned home to the Pacific Northwest in 2020 to lead the culinary program at Hitchcock Restaurant Group on Bainbridge Island. In 2022, he conceptualized and opened Seabird, which was recognized by Esquire Magazine as one of America's Best New Restaurants, earning the #12 spot on its annual list. In 2024, he co-founded The Greenwood American Bistro in Seattle with a longtime friend and fellow Culinary Institute of America alumnus. Although the restaurant closed in late 2025, the experience reinforced his passion for building thoughtful hospitality experiences and meaningful connections through food.
Today, As Chef Rico cooks up his next big career moves. Meanwhile, he travels and creates intimate private dinners, culinary events, and collaborative chef experiences, like this one!
His cooking is rooted in the landscapes of the Pacific Northwest, blending refined technique with a deep respect for local ingredients, seasonality, and the stories behind every meal. Whether serving a multi-course tasting menu or cooking over an open fire, his goal remains the same: to create food that brings people together and leaves lasting memories.

When he's not in the kitchen, you'll likely find Grant running outside, diving for seaweed along the Washington coast, experimenting with new ways to cook humble vegetables, or spending time with his wife, Jenna, dog Frank and their newborn son, Warner.
