The lineup moves from the bright, lightly effervescent Txakoli of the Basque coast to a fruity, refreshing Borsao Garnacha, all the way to the depth and complexity of an Imperial Gran Reserva Rioja — one of Spain's most iconic reds, made only in exceptional harvests. Along the way, you'll also taste two expressions of Lustau Sherry, from the dry, nutty Amontillado to the rich, fig-and-raisin sweetness of a Pedro Ximénez.
To match these wines, Chef Forster worked closely with our sommelier Tyler to build each pairing with care and intention. He then collaborated with Danny — vomFASS store manager and our resident Spaniard — to shape a menu of true heritage dishes that honor the way people actually eat in Spain, prepared DelecTable style.
