Gather around for Summer Grill Night, a weekly outdoor dinner that celebrates the best of the season, grilled to order over a charcoal fire. Each Thursday features a new, delicious menu—sometimes rustic, sometimes refined, always lively and full of flavor. It’s backyard BBQ meets open-air supper club. Expect vibrant sides, good company, and beautiful sunsets over the farm.

Join us for a relaxed summer evening on the farm as we cook over live fire and celebrate the best of the season. The menu begins with BBQ-rubbed, charred carrots layered with cool buttermilk dressing, fresh dill, and crunchy garlic breadcrumbs, followed by our centerpiece: a whole chicken, spatchcocked and grilled over charcoal, served alongside roasted fingerling potatoes and grilled asparagus. We’ll finish with a rustic seasonal dessert highlighting peak local fruit.
Spatchcocking—a technique with roots in 18th-century Irish and British cookery—refers to removing the backbone of a bird so it can be flattened and cooked evenly. The term is believed to come from “dispatch the cock,” a method developed to cook poultry more quickly over open flames. By laying the chicken flat on the grill, we achieve crisp, evenly rendered skin and juicy meat, all kissed with the flavor of charcoal and a marinade of garlic, lemon, and fresh herbs. It’s a simple, time-honored approach that perfectly suits a night of outdoor cooking and gathering.
