Led by Joe Wanda of Wanda farms, McCullough Kelly-Willis of the Chicago Meat Collective, and Chef Lee Kuebler of Elawa Farm, this panel will equip you with the knowledge to consume meat more consciously.
We will discuss the differences in meat quality between industry and pasture while learning about various processing techniques. Panelists will also decode the different cuts of beef, including which cuts to use for various culinary applications.
