If we have to welcome chilly weather to Chicago, a hearty and rustic French meal will do wonders to fortify us against the cold.
Wine helps too, and we will have plenty for purchase, by the bottle or glass.
1) French Country (vegan) Cheese Plate
Truffle Brie, 45-day Roquefort, and Wine-Soaked Feta with sourdough bread.
2) French Onion Soup
Onions slowly caramelized for 5 hours, deglazed with Champagne, and then cooked with an umami-rich broth made from kombu and shiitakes.
Topped with a crust of bread and melted cashew cheese.
3) Frisee & Lardon Salad
Frisee and Endive dressed in a warm pearl onion and seitan bacon Dijon vinaigrette, and served with griddles brioche and carrot-tomato yolk.
4) Trumpet Mushroom Sausage Bourguignon
This is a classic French dish we're going to veganize just for you.
We'll use a red wine reduction sauce with mirepoix and garlic to braise Lions Mane and Oysters grown for us by Chicago's very own Four Star Mushrooms and serve it with herb braised potatoes, carrots, button mushrooms, and pearl onions to make a very refined, veganized, classic French dish dotted with smoky eggplant bacon and fresh herbs.
5) Pear-Juniper Tart: The best! Made by our baker Amelia.
6) Croissants! You'll get to take home one of our croissants! Either enjoy it tonight, or as a treat in the morning.
