I'm very inspired by the Saturday Green City Market on Clark, as well as Miyoko's most recent cookbook 'The Vegan Creamery.'
I'm going to combine some of each into a sensuous vegan Tuscan-style Dinner.
This dinner can be gluten free by request.

1) Miyoko-Style Butter with Publican Bread. Fancy Plants Wine Marinated Feta, Rosemary Olives, and Marcona Almonds
2) Sweetcorn Gazpacho with Almond Parmesan, Scallions, and Crispy Shallots
3) Miyoko-style Watermelon Seed Mozzarella Caprese: Baby Heirloom Tomatoes, Basil, Arbequina Olive Oil, Balsamic.
4) Spinach and Ricotta Filled Cannelloni: Roasted Pattipan Squash roasted in Fermented Pepper Paste, Nasturtiums
5) Cherry Tiramisu: Vegan Marscapone, Fresh Cherries
