The à la carte menu is shaped by Chef Dio Buan’s lived experience—rooted in the dishes he grew up cooking and eating in the Philippines, and refined through his training as a Master Cook at Joël Robuchon Las Vegas. Drawing from regional Filipino traditions and historical techniques, the menu is designed for both sharing and individual dining at a relaxed pace.
This residency marks Istorya’s next chapter after three years of pop-ups and collaborations, creating a recurring space to return, gather, and experience Filipino food through story and care.
