SOPA DE LIMA:
Clear roasted vegetable & chicken consommé steeped with charred Yucatecan key limes, aromatic cinnamon, and Mexican oregano. Served over crisp tortilla threads, pickled red onion, and cilantro oil.
PLATO PRINCIPAL:
Roasted quarter chicken smothered in a rich, 20-ingredient dark mole sauce of toasted chiles, warm spices, and Mexican chocolate. Served alongside creamy huitlacoche risotto
Risotto de Huitlacoche - Arborio rice cooked in a savory broth with earthy Mexican corn truffle, tender sweet corn, white wine, and aged Cotija cheese
DESSERT:
Traditional orange blossom and fresh citrus zest brioche, brushed with sweet butter and dusted with sugar. Served warm with spiced Mexican hot chocolate.
