méthode ancestrale (pét-nat etc.) ---
While it may be physically impossible to capture lightning in a bottle, with a bit of yeast & a healthy dose of sugar, you DO capture CO2. This is how you make “petillant-naturel” - or “pet-nat” to close friends, Champagne’s raw, provincial cousin that the French have been poppin’ since at least the 16th century.
méthode traditionelle (champagne, crémant etc.) ---
Ah, Champagne... the majestic region tucked just north of Paris, where the hills are rolling & the wines are, well...sparkling. Champagne is the alleged birthplace to méthode traditionelle - aka
“champenoise” - a process of making bubbles (on bubbles) through a secondary fermentation in the bottle. Leave it to the French to be so extra.
