Mirate is proud to welcome Diana Pinzon co-founder of Zinacatan for a 5 course mezcal tasting dinner paired to 5 courses from Mirate Chef Alan Sanz celebrating the rich culinary traditions of Puebla.
Founded in 2019, Zinacantan maestra mezcalera Fabiola Torres Monfil and Co-Founder Diana Pinzon, an ecologist, define Zinacantan as an agroforestry project first and a mezcal brand second. Committed to strictly seasonal production and regenerative agriculture, Zinacantan is committed to producing mezcal as responsibly as they can. While maintaining an eye to the future, they are also invested in reviving the traditions of Fabi’s father and grandfather with plans to build a wooden still and utilize cowhide fermentation for small production special releases. Everything produced by Zinacantan is grown from seed, fermented with wild yeasts, and distilled to proof in a single distillation run with the exception of a few special releases.
