The session will be led by Shuta Aoki, the fifth-generation head of Marukome. Featuring a three-part "Learn, Touch, and Taste" program, this experience includes an interactive seminar on miso history and koji science, a hands-on workshop making "Samurai Miso Balls"(Misodama), and a "Fermented Craft Ozen" multi-course lunch designed by Chef Odo.
Guests will also have access to the exhibition featuring 100-year old brewing barrels and antique tools.
