As we celebrate the final event with a three course fiesta dinner, Tito Johnny’s looks to pay homage to the Miranda family’s early roots in Toronto where they opened a Filipino store in 1975 with the name “Barrio Fiesta”. The store is an example of breaking barriers and exposing others to Filipino food and culture. Halo-Halo is the iconic shaved ice Filipino dessert that translates to Mix-Mix.

Appetizer
• Lumpiang Shanghai with smoky sweet chili and green mango salad.
Fiesta plate
• Choice of lechon pork belly or beef brisket with laing rice, pancit, sitaw and apple liver sauce.
Dessert
• Maja Blanca with corn bread.
Halo-Halo bar
• Classic toppings with soft serve.
About Chef Jeffery Miranda
Being a diasporic Filipino has influenced and shaped Chef Jeff Miranda’s culinary perspective. His parents came to Canada in the 1960’s and were one of the earlier waves of Filipinos coming to Toronto from the Philippines. His cooking inspiration comes from the foods his parents cooked for him during his childhood, growing up around many different cultural groups at church and in the many neighbourhoods his family lived in, and his biggest critics - his children - who he loves to feed. From his parents kitchen where he learned how to cook, his cooking journey includes being a cook at Grey Gardens, Dailo and Buca. These restaurants have helped shape the chef he is today.
