Explore the world of Mexico’s agave spirits with this one night only chef’s experience dinner. Created especially for Oyamel’s annual Tequila & Mezcal Festival by Head Chef Omar Rodriguez, learn more about these unique spirits as you sip and savor your way through the menu that highlights festival specials and dishes available just for this evening. Each of the five courses will be paired with a tequila or mezcal hand-selected by our beverage team.

1st Course
Aguachile de remolacha
Beet-cured Japanese ono in a beet aguachile with pickled beets and tomatillo
2nd Course
Ensalada de nopalitos
Fresh cactus paddles, cherry tomatoes and cucumbers tossed in a pasilla de Oaxaca chile oil, served over refried fava beans with pickled onions and queso fresco
3rd Course
Ayocotes en mole coloradito
Heirloom Oaxacan ayocote bean stewed with a mole coloradito of guajillo and pasilla chiles, served with seared Rocky Hollow Farms pork belly and masa chochoyote dumplings
4th Course
Cordero a la barbacoa
Carved right before your eyes!
Whole leg of Shenandoah Valley lamb braised with ancho, guajillo and cascabel chiles and avocado leaf, served with sliced cucumber, a habanero-mint salsa and house-made corn tortillas

Mezcal-lime sorbet with fresh mango, pineapple, cucumber and jicama, topped with mango espuma, chamoy drizzle and mint
