We're hyper-focused on bringing you a high-quality thoughtfully made bowl of ramen, with careful consideration to every component in these bowls.
Every single bowl of ramen we serve includes soup made carefully using various animal bones, meat, aromatic vegetables, and using core dashi ingredients. We treat it like making a beautiful smoked brisket. We don’t set a timer and call it done when the time is up. We taste, and let the soup tell us when it’s done.
Every bowl includes noodles made from scratch, using exactly measured custom flour blends we decide on right before mixing the flours, water, kansui, and salt together.
Even down to the proteins.. we hand pick the meat cuts and we smoke our pork shoulder, roast our pork loin chashu, and use different cooking techniques to make the meat have a pleasant bite and tenderness.

Please note:
• Our ramen bar seats only six guests at a time. Table seating will also be available.
• Dine-in only — we won’t be offering to-go orders for this event.
Service details:
• Please arrive promptly at your reserved time. Please note that your reservation is the meeting time, and there may be a 5-20 minute time lag between actual entry and food service. Late arrivals may result in forfeiture of your reservation.
• Deposito: El Nopalito is closed on Sunday. We will have water and non-alcoholic drinks available for purchase.
• You’ll be served your ramen shortly after being seated. Although you may be in eating with a group, once you’ve finished, please place your bowl on the bar in front of you and promptly free your seat for the next guest.
