The elusive New York City pop-up that’s captivated the culinary underground. With no permanent address, no public reservations, and a reputation built entirely on word-of-mouth, Aftergold is nearly impossible to access; unless you know exactly where to look. Now, in a once-in-a-lifetime collaboration, this boundary-breaking concept travels across the globe to take over our iconic rotunda for an event defined by rarity, refinement, and intrigue.
In collaboration with Chef Jamie Musgrave and the creative team at Restaurant Botanic, Aftergold brings its genre-defying tasting experience to Australian soil for the very first time. Chef Nate Kuester- former Executive Chef of the Michelin-starred Naro and Chef de Cuisine at Atoboy- is joined by Master Sommelier Jonathan Eichholz to deliver an immersive culinary journey that fuses Korean-American heritage, storytelling, and modern technique.
Guests can expect a thoughtfully composed menu featuring dishes such as tempura-fried minari with grilled ginger and white pepper flowers, butterfish with sea cucumber salad and bergamot oil, and black sugar ice cream with barley and perilla seed served alongside warm Hudson Valley doughnuts.
With only 24 seats available per evening, this fleeting collaboration captures a singular culinary moment. One that cannot be repeated, and won’t soon be forgotten.
