Founded in 1922, Hakkaisan Brewery is situated at the foot of sacred Mt. Hakkaisan, meaning “eight peaked mountain”, in Niigata, Japan. The region is famous for its deep winter snowfalls which sometimes reach over 10 feet. Hakkaisan’s brewing water starts as pure snow and after being lightly filtered by the mountain soil, springs forth at the base of Hakkaisan Mountain.
This soft, pure water from Hakkaisan’s dedicated stream is used in all aspects of production, and is central to the unique quality and taste of Hakkaisan sake.
Experience a masterfully curated 19-course omakase menu by Michelin-starred Chef Cheng Lin, featuring:
• Five otsumami (small appetizers)
• A comforting soup
• Ten exquisite nigiri
• One hand roll
• Two indulgent desserts
Hakkaisan sake pairings and à la carte selections will also be available for those who wish to indulge further.
Each dish will be thoughtfully paired with six varieties of Hakkaisan sake, including the ultra-rare Hakkaisan Kongoshin—a sake of unwavering quality. This premium Junmai Daiginjo, crafted from Grade-A Yamadanishiki rice from Hyogo Prefecture and Gohyakumangoku rice from Niigata, is aged for two years at sub-zero temperatures, resulting in an elegant aroma and a smooth, delicate texture.
