Braised Pork Ramen
White Miso and Pork broth. Pulled Pork Shoulder braised in Soy, flavored with Peppercorns,Star Anise and Cinnamon. Egg & Flour Noodles. Topped with Blanched Spinach, Fried Shallots, Green Onions, Nori and Sesame Seeds
Soba & Ebi
Green Tea Soba Noodles Chilled in Soy Garlic. Topped with Shrimps Skillet Charred in Chilli Garlic Oil.
Tuna Tartare
Big Eye Tuna, Toasted Sesame Oil, Togarashi, Shallots, Black Pepper. Topped with a Quail Egg Yolk, Micro Scallions and Sided with House Made Wonton Chips. On a base of Avocado Puree.
