Spring is always a unique time for us at the Forks, its a time that reminds us of growing up, of getting back into the forest and a time for us to take stock in where we came from and where we are now. Growing up in rural West Virginia wasn't always easy, but our family always made the best of what we had available. With this Chef's table we are proud to showcase the food that meant so much to us growing up during this special time of year. First Course - Crab stuffed Morel mushroom with a mornay sauce and fresh herbs.
Second Course - Chicken and dumplings with roasted vegetables.
Third Course - Creamy potato and leek with chives, sour cream and fresh cracked pepper.
Fourth Course - Greens tossed with bacon, eggs, croutons and green onion dressing.
Fifth Course - Sorbet: Sour Apple
Sixth Course - Pan fried Appalachian trout with almonds, lemon butter, fried potatoes and sauteed ramps.
Seventh Course - Wild berry cobbler with house made vanilla ice cream.
