Chef Stalnaker has put together a seven-course menu that’s not just inspired by the Keys—it’s drenched in them. We’re talking fresh-off-the-boat seafood, citrus that could’ve been plucked from Hemingway’s backyard, and flavors that don’t just whisper—they shout. This isn’t a meal for the faint of heart. **First Course:**
Florida oysters, lightly breaded and fried, served with jalapeño aioli and horseradish whipped cream.
**Second Course:**
Ceviche with pink shrimp, scallops, mahi-mahi, and crab in cilantro lime juice.
**Third Course:**
Fish stew, braised with white fish and vegetables in a herb fennel cream.
**Fourth Course:**
Cuban greens: crisp lettuce tossed with spicy capicola, maple ham, Swiss cheese, mustard dressing, and Cuban garlic croutons.
**Fifth Course:**
orange sorbet
**Sixth Course:**
Grouper, pan-seared with lemon butter blanc, heirloom tomato, chives, conch fritters, and spicy remoulade.
Seventh Course:
Key lime pie made with fresh Florida key limes, creamy custard in a graham and macadamia crust, white chocolate sauce, and vanilla chantilly.
