We are excited to announce our 2025 Tasting Menu Dinner Series! Every quarter, we will host a unique, chef-curated tasting menu, each highlighting one of our farm purveyors and distilleries.
This quarter, we are highlighting American Bison sourced from Rock River Ranch in Hudson, CO and Laws Whiskey House.
This tasting menu will feature 5 courses and with drink pairings for each course (non-alcoholic pairings are available), with surprises along the way!
Please note that this is a community seating style event and you will be seated with other guests. We will keep your party (number of tickets purchased per person) together.

Spring Bison Burrata Salad; shaved bison bresaola, pickled kumquat, salsa verde

Creamed Corn Risotto; fresno chile, mint, whipped bison butter, basil oil

Hot & Cold Duo
Bison Tenderloin Tartare; pickled mushroom relish, parmesan, egg yolk
Bison Broth; braised bison vindaloo, coconut foam, fresno gremolata, cilantro
Course 4
Bison Tenderloin; chateaubriand wild mushroom tea, basil, preserved lemon curry, wasabi, bison demi-glace
Course 5
Chocolate Bombe; lemon chiffon cake, chocolate ganache, bison tallow caramel, candied pecans
