Vendador x Hermosa: Chef Ethan Lim & Chef Francis Pascal Collaboration Dinner
One night. One table. Two chefs whose paths couldn't be more different — and a menu that only makes sense because of it.
On March 26th, Chef Francis of Vendador and Chef Ethan Lim of Hermosa come together for a single-evening, 5-course hybrid tasting menu inside a secret room at The Publishing House in the West Loop. The menu draws from both of their backgrounds — Albanian and Cambodian culinary traditions, classical fine dining technique, and the best of what's coming into season.
Ethan opened Hermosa in 2015 and has been cooking family-style Khmer cuisine with the precision of someone who trained at The Aviary, NEXT, and The Office. His restaurant is #12 on Chicago Magazine's Best Restaurant List and an Eater Essential.
The evening begins at 6:30pm with a cocktail reception and passed bites, followed by dinner at 7:00pm. Wine and spirit-free pairings available for purchase. All dietary restrictions will be accommodated, please note them at the time of booking.

ABOUT GUEST CHEF ETHAN LIM
Ethan Eang Lim is a recipient of the Jean Banchet Rising Chef of the Year Award. A Cambodian refugee who immigrated to the United States in the 80s, Ethan grew up immersed in the world of his hardworking parents’ Chicago restaurant. After dropping out of high school, he cut his teeth in retail at Marshall Fields, eventually moving to high-caliber brands such as BMW and MINI, but found himself drawn back to his roots: food. Under his parents’ guidance, he learned the discipline, language, and finesse required to be a chef. Ethan attended Kendall College with the skills he later honed at multiple acclaimed Chicago restaurants, like The Aviary, The Office, and NEXT.
