Culinary Curation is all about promoting Japanese culinary culture and helping people understand its nuances. While people certainly enjoy stateside Japanese restaurants, the richness, delicacy and sheer variety of Japanese cuisine can only be experienced in the country itself. Since traveling there is not an option at the moment, we created a series of culinary events collectively titled: Create Japan.
Our summer installation is KAKIGORI.
Kakigori means shaved ice in Japanese, and it’s a must-have treat during Japan’s hot and humid summer. What makes this treat unique is Kakigori’s cloud-like fluffy ice, that gradually melts in the mouth, bringing a surge of cool flavor without the ‘ice-cream headache’. To bring Japanese Kakigori to Los Angeles, Create Japan teamed up with Wanderlust Creamery, well-known for its expertise in crafting flavors from travel memories, and Kuramoto Ice, an ice company from Kanazawa, Japan well-renowned for their expertise. Each ice block takes over 48 hours to make and for this event, they will be imported to the United States and shaved to order.
There will be two flavors available. The first is roasted green tea (hojicha), using Kanazawa’s kaga bocha; a special roasted green tea that utilizes only the stems of green tea plant combined with Wanderlust’s ‘hojicha with burnt honey’ ice cream. The second flavor is melon, which features a special hokkaido milk ice cream that Wanderlust created specifically for this event, along with melon syrup and a melon soda foam, both using Weiser Family Farm’s melons.
