Join us for a five-course tasting experience, thoughtfully crafted by chef and certified sommelier Hillary Gillis and paired with wines presented by winemaker Dave Petterson.
Each course has been designed to highlight the season’s best ingredients while showcasing the character of our single-vineyard, Dundee Hills estate wines. From delicate seafood to vibrant garden produce and bold, savory flavors, this experience offers a journey through texture, taste, and craftmanship.
More than just a pairing, this is an opportunity for meaningful interaction. Guests will hear directly from both the chef and winemaker about the courses and wines—offering insight into the inspiration behind each element. While carefully orchestrated, the format remains relaxed enough to encourage conversation, questions, and personal connection with our winemaker and team throughout the event.

• Rockfish tartare with citrus parsley oil and cornmeal crackers
• White corn and caramelized onion strudel with micro greens
• Chilled garden tomato soup with spicy shrimp
• Herb and pistachio lamb chop with Oregon grape leaf dolmades
• Strawberry lemon verbena cobbler
