Shifting the Lens: Dinner and Dialogue with Chef Ana Castro
Shifting the Lens returns to the Bubble Room for another guest chef series
that showcases people, cuisines and flavors that have historically been
overlooked by traditional winery culinary and pairing programs. Our second
guest in the series, Chef Ana Castro offers a menu rooted in traditional
Mexican cuisine passed down through generations – what Chef Castro calls
her “ancestral knowledge.” This carefully curated five-course tasting menu will
be paired with small-lot sparkling and still wines created by Winemaker Nicole
Hitchcock.
$250 per person; $235 for Club J members; Luxe members receive two
event tickets with their membership, which can be used for the Shifting the
Lens Dinner & Dialogue events.
During this special Dinner & Dialogue event, Chef Castro will join guests
throughout their tasting to discuss the stories, narratives and philosophy
behind each dish. She will then be joined in conversation by Winemaker Nicole Hitchcock and other winery leaders to discuss the current culture of the food
and wine industries. Club members receive early access to this exclusive
Dinner & Dialogue experience.
Chef Castro was named one of Food & Wine magazine’s Best New Chefs 2022.
She was raised in Mexico City by her grandmother, who taught her to cook by
instinct and learn the importance of working in a healthy, relaxed environment. She went on to train at Le Cordon Bleu and has worked in top, Michelin-level
restaurants in New York, New Orleans and elsewhere.
Disillusioned by the toxic kitchen culture of many restaurants, Chef Castro has
created a supportive, equitable system at her acclaimed New Orleans
restaurant, where people are valued for their individual, unique contributions.
During Shifting the Lens, Chef Castro hopes to highlight how food can bring
people together and cure whatever ails the soul.
Gratuities are appreciated and will be pooled and distributed among all nonmanagement service staff supporting our guest experiences.
