Each Sunday, we offer a casual supper built around a different theme. This time, we're kicking off a series to highlight some of our farmer friends, without whom we could not do what we do. Each course will feature one or more ingredients from the farm we are celebrating that night, and the farmers will join us as special guests.
We're starting this series with Keia Mastrianni and Jamie Swofford of OLD NORTH FARM. The impact that these two have had on the Carolina Piedmont is broad and only continues to grow. Their many endeavors go beyond the planting fields: Milk Glass Pie, a scratch bakery; Old North Shrub, an award-winning drinking vinegar company; Pleasant Living, a collection of essays and recipes about life in WNC; and the special gatherings they hold on their farm that attract culinary talent and guests from across the state. They're tireless, talented, and genuine builders of community.
Anyone who buys produce from Keia & Jamie immediately understands the level of intention they and their team have, from seed selection to harvest. Storytelling comes naturally to both of them, which only deepens our appreciation for what they bring to our kitchen.
OLD NORTH FARM SALAD
Torn lettuces. Shaved carrot and summer squash. Shredded cabbage. Creamy shallot vin. Pan grattato.
STUFFED SQUASH BLOSSOM
With shrimp and fresh herb mousseline. Fennel cream.
PORCINI TORTELLI
Porcini, Parmesan, and ricotta stuffed pasta purse. Local mushroom brodo. Agretti.
BISTECCA
Seared and sliced steak served with:
- Seared sprouting cauliflower w. Pine nuts, chopped herbs, chile flakes, Parmesan, and EVOO.
- Roasted fingerling potatoes w. Whole grain mustard
- Sicilian style braised Romano beans w. olive, tomato, and garlic
- Italian salsa verde
BINGSOO
Korean style shaved ice with basil syrup and zabaglione custard.
Cocktails, mocktails, wine, and beer will also be available for purchase.
