At 18, Mark began his culinary career with an apprenticeship at the Sonesta Hotel in Amsterdam, followed by studies at l'Academie du Vin in Paris. After working at Michelin-starred restaurants and as Sous Chef at Vintage Wine Bar, he managed Deer Valley Resort's Café Mariposa and became the youngest Food & Beverage Director at The Boulders Resort. In 1994, he opened Tarbell’s Restaurant and later launched Barmouche, The Oven, The Wine Store, and The Tavern, earning numerous accolades, including two inductions into The Arizona Hall of Culinary Fame. In 2024, Mark founded Cha Cha Mouche Wine Provisions, specializing in unique wines, and continues to support culinary education as a board member of C-CAP and the Jacques Pépin Foundation.
