Founded in 1849 and still entirely family-owned across six generations, Pol Roger has long occupied a singular place in the world of Champagne. Bastien Collard de Billy, sixth-generation family member, hosts a rare and intimate deep dive into the house's most iconic cuvée: the Cuvée Sir Winston Churchill—a wine that spends a minimum of ten years on the lees, requires family approval before each new vintage is released and traces its origins to the extraordinary friendship between Odette Pol-Roger and Churchill himself, who called the house “the most drinkable address in the world.”
The evening begins with a Garden reception before moving into the West Room for a seated dinner. Across five courses, the menu unfolds from Chef Keller's iconic "Oysters and Pearls" with Island Creek oysters and Regiis Ova caviar, to Japanese Shima Aji "Tartare," Norwegian Langoustine “à la Plancha” with Regiis Ova Caviar “Vin Jaune” and Four Story Hill Farm Poularde with Carnaroli risotto biologico, concluding with a “La Tur” Gâteau finished with pear marmalade and pine nuts—each course accompanied by a thoughtful progression through the Churchill cuvée and rare selections from the house’s Vinothèque ranging from 1999 to 2018: a curated library of aged releases drawn from Pol Roger's famously cold chalk cellars in Épernay.
