James Kent started his culinary career as a summer apprentice at Bouley when he was fifteen years old. After taking classes at Le Cordon Bleu in London and Paris then graduating from Johnson and Wales, James moved back to New York where he spent time in the kitchens of some of its most storied restaurants, leading Eleven Madison Park and the NoMad. He has represented the United States at the international finals of Bocuse D’Or, placing tenth in the world. He opened his first solo project, Crown Shy, in March 2019 and followed it with SAGA in August of 2021.
Alison Arth is a leadership coach, consultant, and author whose career is dedicated to helping hospitality professionals find greater joy and deeper purpose in their work, and achieve personal and professional change in the direction of what's most meaningful to them. She founded Salt & Roe in 2014 in support of making the world a more connected place, one restaurant at a time.
